Jammie Dodgers Cupcakes 

Welcome back

For todays post is going to be a baking one, today im going to be showing you how to make jammie dodgers cupcakes these are simple to make so they easy for you to join along & bake them…

Ingredients you will need: 

225g butter
225g caster sugar
4 large eggs
225g self raising flour
2 level tsp baking powder
1 tsp Vanilla extract
1) pre heat your oven at 180°c & pop your bun case into a cupcake tray. 

2) measure out your butter, sugar, eggs, flour, baking powder & vanilla extract pop them all in the bowl & mix them all together for 2 to 3 minutes you could do this by hand or with a mixer.

3) scoop your mixture into each bun case i do this by using a ice cream scooper makes it so much easier because you get the right amount of mixture or you could use two teaspoons..

4) bake them in the oven for about 25 minutes until golden brown & a skewer comes out clean, let them cool in the tray them transfer them in to a wire rack to complete cool..

For your icing you will need:

200g butter
300g icing sugar
1 tsp Vanilla extract 
Measure your butter & mix slightly so it softs it abit then add icing sugar a little bit at a time then when its all mix together add the vanilla extract & mix…

You will also need two piping bags so you pip some jam into the middle of the buns then you can pop the icing mixture into the other piping bag to pip on the top & add some jammie dodgers on to the top…. Then enjoy
